Mendo is a food trailer in Maui that provides hand-made quality ramen and dumplings. We are two chefs with a passion for noodles and dough. MENDO signifies raMEN and DOugh for the manDOo (dumplings).
Our mission is to serve affordable quality food that will nourish the soul of the people while supporting the community by striving to use local ingredients. We will proudly source local farmers as much as we can and credit them.
Mendo is a locally owned operation by a husband and wife team. Takuya Toride has worked with Chef Masaharu Morimoto as Sous Chef in Napa/Waikiki/Maui, and recently Sous Chef at The Mill House in the Maui Tropical Plantation. Mijin Kang Toride has worked at Terra and Ame under Chef Hiro Sone and Lissa Doumani in San Francisco. She was recently the Chef de Cuisine of Ka'ana Kitchen at the Andaz Maui at Wailea Resort.
Mendo is here to provide you with delicious food with innovative ideas while keeping the tradition of our Japanese and Korean cuisine. We will be serving food that reflect our cuisine but with our own twist for a unique dish that you could only get here in Maui. #MendoMaui
